We’re very excited to announce that we now carry paneer! Anyone who has dabbled in Indian cuisine knows exactly what paneer is. This protein-rich ingredient adds a moist and soft texture that’s easily crumbled into any dish. Dating as far back as 6,000 BC, Paneer is a fresh cheese frequently used in cuisine from the Indian subcontinent, similar to queso blanco. In eastern parts of South Asia, it is generally called Chhena. It’s an unaged, acid-set, non-melting farmer cheese, or curd cheese made by curdling heated milk with lemon juice, vinegar or any other food acids.
More familiar to the western countries, is ricotta. We’re proud to say that we carry locally made fresh ricotta cheese. Both cow’s milk and the more traditional sheep’s milk are available for purchase. Like other whey cheeses, ricotta is made by coagulating the proteins that remain after the casein has been used to make cheese, notably albumin and globulin. Thus, ricotta can be enjoyed by people with casein intolerance. Whether you’re making stuffed shells or a hearty lasagna, ricotta will add a distinct creamy, tangy flavor that will make the your dish shine.
